ESCAROLE IS THE NEW CAVIAR


I am completely hooked on this stuff!  A great winter comfort food. The best part is that it's so good for you - low calorie and tastier than just about anything.  This is a photo I took of my version, made from this recipe and then topped with some goat cheese and walnuts (or almond slices, your choice).  I also add some lemon juice and substitute old bay seasoning for crushed red pepper flakes while sauteing.

  1. In Spain is usually and normal eat escarole, sometime i love escarole with grenadine...hummm

  2. Oh! I'm so glad you posted about this. I had the most amazing pasta dish many years ago in San Francisco with escarole...it was new to me but I loved it. I have bought it since but was never sure exactly what to *do* with it and my attempts failed miserably! I'm definitely going to try this out - thanks!!!

  3. I love escarole and sautee it with just a little olive oil and garlic, easy and delicious (wish my kids agreed) I will have to try your recipe, sound delicious!

  7. I love it and you can use left overs in chicken broth for soup..
    Never had it with nuts,,
    Here comes a hell of a snow storm. I have to cancel an appointment. can't drive in this..

  12. I love escarole. I just might make this tonight. And your toppings love divine! I always need my cheese and nuts on my greens. You should upload your photo to the Whole Foods website. I just saw that they don't have a photo uploaded yet!
